Like the other poster said, you do NOT owe them any sort of explanation as to why you are not going take the job. Simply say that you have recently been made aware of their very long history of serious payroll problems and you cannot afford to work for a company where you do not know if or when you will get paid. That is all you need to say. They need to know that people know about this and that it's going to hurt them very significantly when it comes to finding people who are willing to work for them with their reputation. The reason they are hiring is because people have been quitting left and right due to not being paid. Don't make yourself a victim!
