income, check stubs, tax returns, etc. There are a few lenders out there who will not accept self-employment as verifiable income though, so find a different lender. there are many who do accept it. The ones that don't are pretty much rip-off places anyway. I will not mention names, but have encountered that in the past as well. Try your local credit union. They usually are not as strict on requirements. good luck.
