I've never heard of Southern Transcription, but I've heard that script many times in the past with other companies. My advice is to not pass up other jobs while waiting for this one to come alive, especially if they are totally keeping you without ANY work or training at this point. Seriously, you don't owe them any loyalty and they likely will not hesitate to cut you off if their new account never goes live.
I guess it really depends on your own situation and whether you feel you can afford to wait, how possibly getting nothing from them in the end would affect you, etc.
