When I was recovering from my hysterectomy, one of the doctors who taught at a nearby college came into my room accompanied by a young woman. He introduced her as "_____" (I forget what her name was), one of his student nurses, and asked if I minded if she took care of me under the supervision of my regular nurse. I agreed. That young woman was superb! But I, too, like the OP would not want a scribe following my doctor or nurse around. Non-medical personnel have no business being in a patient's room/ER cubicle/whatever.
