Hi Retta,
Great to see ya on board again! I like to do the same, stretch it as far as you can.
Start with a 10 lb bag of legs and thighs with backs at 59 cents a lb. Cut it up, wash it, put some in ziplocs and freeze. With the rest make any one of many variations of chkn dishes.
I make chicken broth from the backs then strain it clear and put it up in the freezer for other recipes...The chicken backs are then peeled off and made into chicken salad and the bones and skin are saved for the dog. Nothing gets wasted here.
Over the years, I've managed to lose (actually, I think someone took) my campbell's cookbook and bisquick ckbk that my grandma gave me...She saved the tops off the bsqk/Betty Crocker pkgs and the labels from the soup and sent in for them....(remember S&H green stamps?) Cat
