I worked Sundays for years and Friday and Saturday were my days off, I still managed to have a good weekend. I'm not a manager but have to say I'm guilty of signing off my email like that at the end of the week. Would you rather hear, "have a crappy day," or "hope you have a car accident?" People are probably working when you are off, it all balances out.
