Some places that sell Windows 8 computers will do a rollback to Windows 7 for free or maybe a small fee, depends on where you get it. I think if you order directly from the manufacturer (Dell, HP, etc.) and request it, they will roll back to Windows 7 before they ship it.
Just FYI, I would get at least 4GB, if not more, of memory as 2GB is not much by the time you get all the programs installed that you need for Nuance. Once you start running the memory short, you start having serious performance issues up to and including freezing, unexpected shut-downs and restarts, and blue screens of death.
